Glorified Rice
This is a simple gluten free dessert my grandmother used to make from just a few ingredients. I’ve even made it from leftover Chinese takeout rice. You can even add mini marshmallows, if you like, but I’m not a big fan of marshmallows.
Ingredients
- 2 cups cooked white rice
- 1 8-ounce can crushed pineapple
- ½ cup whipping cream
- 2 Tablespoons powdered sugar
- ½ teaspoon vanilla extract
Directions
- Drain as much juice from the crushed pineapple as you can.
- In a small dish, combine the rice and crushed pineapple.
- Whip the cream with the powdered sugar and vanilla.
- Fold the whipped cream into the rice and pineapple combination.
- Refrigerate at least 4 hours.
- Enjoy!
