
Cheesy Cream of Cauliflower Soup
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- ½ cup diced onion
- ½ cup diced celery
- ½ cup diced carrot
- 1 small head of cauliflower, chopped up
- 4 to 6 cups low sodium chicken broth
- 4 ounces cream cheese
- 4 ounces sharp cheddar, shredded
- ¼ teaspoon sea Salt
- ¼ teaspoon white pepper
Directions
- In a heavy pot over medium heat, add olive oil and butter then wait for butter to melt.
- Add onion, celery, and carrot. Saute for five minutes.
- Add cauliflower.
- Season with salt, and pepper.
- Stir and cook 5 minutes.
- Add broth and bring to a boil.
- Lower to simmer and cook, covered, 15 minutes.
- Blend with an immersion blender. (If using a regular blender, cover with a towel instead of the regular lid.)
- Add cheeses to puree in pot and allow to melt.
- Bring to preferred temp over low heat.
- Enjoy!
